lemon chicken with butternut squash and fig salad

These are not your common fig newtons. Figs are a wonderfully, naturally sweet flavor easily added into savory dishes. With their dark meaty interior and earthy outer layer, they bring big texture in addition to their flavor. Topped with my versatile lemon chicken, this dish is sure to please! Check out my Lemon Chicken with Butternut Squash and Fig Salad.

my favorite caprese salad

There are so many great ways to build this classic summertime salad. We grow our own basil in our herb garden every year. It’s easy to maintain and grows like wildfire. A readily available ingredient, this dish is a go-to staple during the warm summer nights. Whether you stack it, skewer it, or toss it in a dish, try my fun and simple alternative to Caprese Salad using homemade garden pesto and ripe tomatoes.

Well this past week I tried out two new recipes with their own “green” value; their color! Guy Fieri’s Fire-Roasted Tomatillo Salsa Verde and a summer-fied version of Grilled Romaine graced our plates, and didn’t last very long there! These two “green” recipes not only taste delicious but are also a way to mix up your warm weather dishes. And they both do a body good! Here are the “green” for your summer figure recipes.
