For years I have ripped out recipes from every magazine, marked endless cookbook pages, and printed numerous websites, searching for the best tips on how to make Cioppino, a classic Italian seafood stew dish. This weekend I finally got around to making it…and it was so worth the wait! Three different fishes make it light enough for seconds while hearty vegetables and tomato broth makes it a filling dish. This recipe is mainly adapted from Ellie Krieger’s So Easy cookbook with a few Foodetarian twists. Check out this quick weeknight recipe for Cioppino.

29 plus 1 and gulf shrimp with casino butter

Another year has come and gone and March 20th marked a milestone birthday for me. The dreaded 3-0, or as I have referred to it as, my 29 plus 1. My twenties saw their fair share of extremes, from the highest highs to painful lows but here I am on the other side and I’ve gotta say, they sure did fly by. I have become some how more settled in my own skin by discovering my passions, finding a life path, and earning my proudest title of “Mom.” Thank you for sharing these accomplishments with me through my stories here and by, hopefully creating your own by sharing these recipes with your families and friends!

In true Foodetarian fashion I celebrated with some of the most fun ladies I know with a (surprise!) party and cooking class at Two Steps Downtown Grille in Danbury. Tom was patient while taking countless calls from my party-planning mom adding humor and wit to his food demonstration. It was such an enjoyable evening and I’d like to thank Tom and his staff at Two Steps for allowing us to bring the celebration! I thought I’d share one of my favorite recipes from last night. I’m always looking for ways to incorporate more fish into our family meals. Luckily, my toddler absolutely loves fish. It’s light, flaky, and easy to bite down on for his mini teething gums! This recipe is one that ties the seasons together by using fresh summery swordfish and baking them a la meatballs. I found this recipe on the back of one I had torn out (over a year ago!) of my Rachael Ray magazine and altered it a bit. I served them with creamy risotto instead of traditional spaghetti and it was delicious! Here is my version of Baked Panko Swordfish Meatballs.

Ah, the bitter sweet last weeks of summer. September has come again and the crisp chill of fall is in the night air. For those of us still holding on to warm sunny days and the taste of charred vegetable grillers, here are some flavors to keep us on cloud Nantucket. This middle eastern/Mediterranean mix inspired dinner brings the tangy flavor of traditional falafel rounds, pungent homemade tzatziki, and light, flaky, buttery fish together for a figure friendly dish. speedy spanish weeknight paella

A few years ago I had the opportunity of a lifetime to study abroad in Spain. After staying in the capital of Madrid, we travelled up to the northern coast and landed in the seaside town of San Sebastian. A beautiful city not only known for its two unique beaches, tapas affectionately known as “pinxtos,” and ritzy neighborhoods, but also boasts some of the freshest seafood I’ve ever tasted.

This traditional Spanish dish may seem like a task, but Bon Appetit’s recipe is so simple, you’ll be enjoying a glass of sangria while you wait for it to practically cook itself! I added a little extra liquid while the paella was simmering and I stirred slightly midway through cooking, but other than that, here’s their unaltered beginners version of Weeknight Chorizo and Clam Paella!
