Happy National Pizza Day! I feel like pizza is becoming a common theme within my blog posts, but it’s such a perfect food to play with (and on a day like today) that it’s hard to leave it behind! This recipe was part of a farewell to the editor-in-chief of Cooking Light magazine at the end of last year. It was one of his “six simple recipes” that he chose to leave readers with. So I have been practicing my soup making skills. A dish that seems to be simple, I have always had a hard time getting the perfect flavor. So, like anything, practice makes perfect. This week I tried one of my favorite soups to order out: French Onion. The way the cheese chars over the sides of the crock and encases all the yummy sweet and tangy onion flavor is a staple in any pub. Superbowl is right around the corner and I love, love, love party food. Sure, game day rolls around and we over eat, over drink, and only half of us leave the party happy, but what a fun day to celebrate with food! oooey, gooey cheddar pumpkin ale dip for your halloween monster bash!

This week, I’ve been working on creative ways to get rid of the last of my pumpkin ale. The end of October is here. Our little ghosts and goblins will ring for treats this Friday. November 1st will be upon us with the looming task of Thanksgiving and the switch from all things Octoberfest (my pumpkin beer!) to good wine pairings for turkey and stuffing. So here’s a unique and devilishly tasty way to mix your beer in the meal with my ghoulishly good Cheddar Pumpkin Ale Dip!
