you’ll forget they’re not fried onion rings

This recipe is a funky take on a traditionally deep fried food. Baking saves on the greasy end result but the addition of crunchy potato chips adds enough flavor you won’t miss the oil! Give your Valentine what they really want this year with this tasty treat. Here’s my recipe for Baked Onion Rings.

Ingredients:

1 large onion, sliced in 1/4 inch rounds and separated into rings

1/2 cup flour, plus 1/4 cup

1/2 tsp salt

1/4 tsp pepper

1/4 tsp cayenne

1 6 ounce container plain yogurt (I used vanilla because it’s what I had and they were still delicious! Might be fun to play around with the flavor here 🙂 )

2 eggs

4 cups finely crushed potato chips (I used Lay’s classic but a play on flavor here might be fun too!)

EVOO

Directions:

Preheat your oven to 400 degrees. In a large bowl combine 1/4 cup flour, salt, pepper, and cayenne.

In a second bowl combine the remaining flour, eggs, and yogurt and whisk until a batter forms.

Thick batter will help the chips adhere to the onion rounds

Line 2 baking sheets with parchment paper and drizzle with EVOO. Begin by dipping the onion rings in the flour mixture, then the batter, then tossing them in the crushed potato chips. Place on the baking sheet. Repeat until all the onions are coated.

Bake for 8-10 minutes on one side, flip and bake another 5-7 minutes until golden brown. Serve with your favorite dipping sauce! We went with Sriracha mayo!

Baked, not fried!

This recipe was a hit in my house! It’s fun and crunchy on the outside while the onions stay tender and sweet on the inside. Serve with an array of dipping sauces from honest mustard to flavored mayos for an onion ring “bar!”
