I was lucky enough to taste lots of treats that came from my Great Grandmother’s kitchen. Now I’m lucky enough to continue the tradition of treats with my boys in the kitchen with her original mixer! This was our first time using it to make classic banana bread with a twist. Here’s Luca bear’s (with a little help from mom) recipe for Bundt Banana Bread with Walnuts and Chocolate Chips.
1 stick unsalted butter, room temperature, plus 1 TBS
1 cup sugar
3 over-ripe bananas (I let them over ripen, peel them, and freeze them in a freezer bag so I always have them on hand! Just let them thaw before mashing)
1 tsp cinnamon
1 TBS milk
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2 cup mini semi sweet chocolate chips
1/4 cup chopped walnuts
Preheat oven to 375 degrees. Use the tablespoon of cold butter to grease a bundt pan. Sprinkle the bottom of the pan with the walnuts.
With a hand mixer, cream the remaining stick butter and sugar. Add the eggs, one at a time, until combined.
In a separate bowl, mash the bananas. Add the cinnamon and milk and mix. Add the sugar mixture, chocolate chips, and stir.
In another bowl whisk together the dry ingredients, flour through salt. Add to the bananas and stir until just combined.
Pour the batter into the bundt pan, covering the walnuts. Bake for one hour.
Let cool slightly and flip to remove from the bundt pan.
We only put walnuts on half our bread since my little guy’s still getting a few teeth! Either way, it was a fast and simple recipe for a Sunday morning treat. From Luca’s kitchen to yours, we hope you enjoy!
