This fun twist on a childhood favorite makes for a healthy and delicious side to any dinner! Broccoli as a substitution for potato is an easy swap and making them at home ensures you know exactly what’s going into your little ones dinner. Here’s my take on Broccotots.
2 cups broccoli, blanched, cooled, and chopped
1/4 yellow onion, minced
1/4 cup panko breadcrumbs
1/4 cup Italian breadcrumbs
1/3 cup shredded cheddar cheese
2 TBS EVOO
A pinch of salt and pepper
Preheat the oven to 400 degrees. Combine all the ingredients in a large bowl and mix well.
Shape into “tots” and place on a tin foil or parchment lined baking sheet. Bake for 20 minutes until golden brown. Served with ketchup or any chipotle mayo for dipping!
These make a great side that the whole family will love (cut to my husband eating most of my sons dinner!). I can’t wait to try them with carrots or cauliflower too! Let me know what creative vegetables you “tot!”
