The Mets are in the series! Ok, so I’m a married into Mets fan but I have witnessed the pain and desperation Mets fans endure. But we are ecstatic this week that our team has made it to the final stretch! In honor of our houses New York team, here’s a quick and simple weeknight chili that will please (and serve!) a crowd on a budget! Here’s my Game Day Turkey and Bean Chili.
1 package ground turkey
1/4 cup red wine
1/2 yellow onion, chopped
1 can black beans, undrained
1 can kidney beans, undrained
1 can corn, undrained
1 can (15oz) diced tomatoes
1 package ranch dressing mix
1 package taco seasoning
Heat a large pot over medium heat. Drizzle with EVOO and add the onions. Saute until soft and translucent.
Add the ground turkey. Saute, crumbling with a spoon, until cooked through. Turn the heat to high and add the red wine. Cook until liquid is almost evaporated, about 3-4 minutes. Add the beans, tomatoes, corn, and seasonings. Bring to a boil.
Lower heat to medium low and simmer 20-30 minutes until chili begins to thicken. Serve with warm tortilla chips and topped with cheddar cheese and sour cream.
