Breakfast time can be a challenge in so many family mornings. These little bites are the perfect grab and go snack for AM munchies. Bake them on Sunday and keep them in an air tight container for the week! A perfect play on the children’s favorite peanut butter and jelly sandwich, these PB & J Bites are sure to get your day started off right!

Ingredients:

2 cups rolled oats

1/4 cup quinoa

1 cup chunky peanut butter

2 TBS maple syrup

1/3 cup water

1/2 cup strawberry or grape jam, jelly, or preserves

Directions:

Preheat oven to 350 degrees.

Place the peanut butter, syrup, and water in a small sauce pan over medium low heat. Cook, stirring constantly, until the peanut butter melts and the ingredients are combined.

In a large bowl mix the oats and quinoa.

Add in the peanut butter mixture and stir to combine.

The fastest “dough” you’ll ever make!

Line a 12 cup muffin tin with muffin cups.

Place 2 TBS of the peanut butter “dough” in each cup, pressing firmly down into the bottom. Dollop each muffin with 1 tsp of jelly and top with another TBS of dough. Bake for 30 minutes. Let cool completely before serving.
