3 minute t-bone with smashed dill potatoes

I just love getting dinner inspiration from my fellow Tweeters and InstaFriends! Tonights Sunday supper is inspired by Bon Appetite Magazine’s smashed potatoes. I catered the recipe to my family by mixing red and gold potatoes, broiling, and adding dill (because I love it and we had some left over!). This 3 minute t-bone is quick and seriously the best way to sear a simple steak. So keep reading to chow down on 3 minute T-bone with Smashed Dill Potatoes tonight!

Seared T-Bone

Ingredients:

2 1-inch thick t-bone steaks

Salt and pepper

Directions:

Heat the grill to medium high heat. Pat the steaks dry with a paper towel. Season liberally with salt and pepper. Place on the grill and cover for 3 minutes.

After 3 minutes, rotate 45 degrees and cover for another 3 minutes. Now turn the steaks over. Cook another 3 minutes. Rotate 45 degrees and cook another 3 minutes. Remove from the grill, cover with aluminum foil and let rest for 5 minutes. Slice thinly and serve immediately.

Smashed Dill Potatoes

Ingredients:

Mixed red and Yukon gold potatoes

EVOO

Salt and pepper

2 TBS chopped dill

Directions:

Preheat oven to 350 degrees. Wrap each potato individually, place on a baking sheet and bake for 45 minutes to 1 hour.

Remove from the oven and unwrap. Drizzle the pan with EVOO. Using a heavy frying pan smash each potato until broken but not crumbling apart. Place on the greased sheet pan, drizzle with more EVOO, and season liberally with salt and pepper. Bake for another 30 minutes until the edges start to brown.

Transfer to the broiler and broil for 4 minutes until the tops brown. Sprinkle with dill and serve with butter and sour cream.
