Oh pasta, how I love you so. Set a big bowl in front of me and I just can’t resist. While spaghetti with marinara is a go-to in our house, sometimes you just need a change. This recipe is just as quick and easy and packs a ton of flavor with only four ingredients…seriously! Here’s my tasty version of Four Ingredient Spaghetti all Carbonara.
1 box spaghetti
6 ounces of pancetta or thick cut bacon
2 large eggs
2 egg yolks
1/4 cup Parmesan
1/4 cup romano cheese
1 tsp freshly ground pepper
Heat a large saute pan over medium high heat. Drizzle with EVOO. Add the pancetta or bacon and cook until the fat renders out and the bits are starting to brown around the edges, about 10 minutes. Remove the pan from the heat and set aside.
Bring a large pot of water to a boil. Add the spaghetti and cook until al dente, about 8 minutes.
Meanwhile, whisk the eggs, yolks, cheese, and pepper in a small bowl. Drain the pasta and add to the saute pan with the pancetta. Toss together. Add in the egg mixture and stir to combine. The heat from the pasta should cook the egg but you can warm over low heat until the sauce sticks. Be careful not to use high heat as it will scramble the eggs.
Yep, with only four ingredients you can close your eyes and pretend you’re sipping wine and twirling spaghetti on a cobble stone street in the heart of Rome! Well, until your 15 months old flings a spoonful your way and you’re wearing it! It was nice while it lasted…
