There are so many great ways to build this classic summertime salad. We grow our own basil in our herb garden every year. It’s easy to maintain and grows like wildfire. A readily available ingredient, this dish is a go-to staple during the warm summer nights. Whether you stack it, skewer it, or toss it in a dish, try my fun and simple alternative to Caprese Salad using homemade garden pesto and ripe tomatoes.
1/2 cup of homemade pesto
1 ripe vine tomato, sliced thinly
1 ball of fresh mozzarella, sliced thinly
1/2 avocado, sliced
Layer mozzarella and tomato on circular dish. Drizzle with pesto, balsamic, and sprinkle with salt. Top with avocado slices. Serve with crusty Italian bread.
Simple as that! This side “salad” makes a fabulous appetizer or accompaniment for a grilled dinner. You could also layer over pizza crust with a drizzle of EVOO and make a tasty finger food!
