Some of my favorite recipes are the ones that get passed around through the family by word of mouth. There’s no “perfect” way to make them and most can be tweaked and twisted into different culinary concoctions resulting in different delightful treats. Here’s a recipe that couldn’t be simpler and puts a new, summery face on the classic baked potato. Here’s my uncles recipe for Blistered and Grilled Potatoes.
4 russet potatoes, cut in half lengthwise
1/2 stick of butter
Salt, pepper, and garlic powder
On each potato, cut side up, place 2 pads of butter and season liberally with spices. Place individually cut-side down on pre-portioned pieces of aluminum foil. Wrap tightly.
Grill cut side down for 20-25 minutes on the grill over medium-high heat. Flip and grill another 20-25 minutes. Remove from foil and serve with your favorite potato toppings! Try crisp bacon bits, cheddar cheese, chives, steamed broccoli, or sour cream!
These easy potatoes make a perfect side for seared steak or juicy, grilled chicken breast. You can even make them the star of the meal themselves by loading them with toppings and serving with a side salad. Hope you’re enjoying your favorite grilling recipes as we make our way into summer!
