Ah, dill. One of my favorite tastes of summer. Okay, so it may be available all year long, but something about this distinct and citrusy herb just begs for warm weather. What a better way to start the season than with a meal thats light, fast, and figure friendly? With a rich and creamy topping, this recipe for Grilled Salmon with Mustardy Dill Sauce is sure to tempt your taste buds!
1 lb salmon filet, skin-on
1 cup sour cream
2 TBS dijon mustard (I ran out, oops! A simple spicy brown mustard substitute did the trick!)
2 cloves minced garlic
1/3 cup chopped dill
A pinch of salt and pepper each to taste (if you care to skip the salt, add 1 tsp of capers instead!)
Mix the sour cream, mustard, garlic, dill, salt, and pepper in a bowl. Set aside at room temperature for about an hour.
Pre-heat grill over medium heat. Drizzle each side of the salmon filet with olive oil, salt, and pepper. Place the salmon filet skin side down on the grill. Grill for about 6-7 minutes until it begins to turn opaque on the bottle. Carefully flip the filet and grill for another 6-7 minutes. Remove from the grill.
Portion salmon and serve topped with a dollop of the mustardy dill sauce over salad, polenta (as I did here), rice, quinoa, or on BLT’s!
This meal is one that I feel good feeding my family. It’s rich, fresh, and the balance of flavors allows the fish to shine without becoming over powering. I prefer serving the fish over a grainy starch or gritty polenta to add an element of texture. Enjoy this healthy weeknight meal with a chilled glass of white wine…after the kids go to sleep 🙂
