Penne alla Vodka is one of my ultimate favorite dishes. Its sweet tasting basil mixed with tangy Parmesan always gives me the feeling of sitting on a terrace overlooking an Italian vineyard, smelling the crisp evening air. Crusty bread for dipping and you have the ultimate Sunday dinner. Here is my ultimately easy Penne alla Vodka.
Penne alla Vodka
1/2 box penne pasta (I like the whole wheat for added fiber!)
1 jar store bought marinara (yep, that easy!)
1/4 cup good vodka
1/2 cup chopped sweet onion
3 cloves of garlic, minced
1/2 cup of grated Parmesan (I used half Asiago and half Parmesan just ’cause that’s what I had!)
1/4 cup heavy cream
A good handful of basil chiffonade
Bring a large pot of water to a boil. Salt liberally. Cook penne until al dente.
Meanwhile, heat a large sauté pan over medium high heat. Drizzle with olive oil and add the onion and garlic. Sauté for about 1 minute until the onion begins to turn translucent. Add in the vodka and cook until the liquid evaporates by half. Add in the marinara sauce.
Reduce the heat to medium and cook until warmed through. Add in the cream and cheese. Cook another 1-2 minutes until heated through and the cheese is melted in. Remove from the heat and add in the basil. Stir to incorporate.
Add in the pasta and mix together. Garnish with basil leaves and serve with warm Italian bread.
This dish is a quick and easy meal that tastes like you’ve been cooking all day! For an added spice, toss in a 1/4 tsp of crushed red pepper flakes with the onion and garlic in the first step. Hope you enjoy this recipe as much as I do!
