I was so thrilled to try out my new gear that I went to a go-to recipe for dinner. Not only is it quick, simple, and a great way to feel summer-y in the polar vortex that’s coming our way, but it turns out it’s fairly photogenic! 1 lb shrimp, peeled, deveined, tails left on
6 TBS butter
3 shallots, chopped
1 large clove of garlic, chopped
Juice of 1 lemon
1/2 cup chopped cilantro
1 can cannellini beans, rinsed
Salt and Pepper to taste
1 box of orzo
Cook the orzo until al dente. Drain and toss with EVOO.
Heat a large sauté pan over medium high heat. Melt in half the butter and add the shallots and garlic and cook about 1 minutes. Add the shrimp and cook about 4 minutes.
Once the shrimp begins turning pink, add the beans, lemon juice, cilantro, remaining butter, salt, and pepper. Reduce heat to medium and cook about 5 minutes, or until heated through and flavors are blended. Serve over orzo, garnish with a lemon wedge, fresh cilantro, and a drizzle of EVOO.
